The king of the jungle is the jaguar, the largest of the New World cats. A male jaguar may reach over six feet in length and can weigh in at 300 lbs. Its short coat, spotted much like a leopard, ranges from grayish gold to reddish tan with spots grouped in small circles, known as rosettes. Unlike the leopard, however, the jaguars’ rosettes surround solid spots. Occasionally, jaguars are black all over. These large cats feed on tapirs, peccaries, foxes, turtle eggs, rodents, even deer, but rarely man.

As you drive in the Yucatán you may see zapote trees with their bark cut in a criss-cross pattern. By cutting them this special way locals were able to extract the sap, which was in high demand in the early 1900s. The sap, called chicle, was the latex originally used for chewing gum. An inevitable consequence of this demand was the need for the Maya chicle workers to push farther and farther into the unexplored jungle to find fresh trees. When they did so, they found many of the lost cities of their Classic ancestors.

Local guides take tourists out in boats to the feeding grounds, where huge flocks can have as many as a million or more birds. It’s a breathtaking sight. Flamingos feed standing on mud banks in estuaries and lagoon shallows. They force muddy water through the serrated edges of their bill, straining the edible animal and vegetable matter for nourishment. The mineral salt content of the muddy water is what affects the coloring of the flamingo – and the Yucatán’s salts make for spectacular colors.
