Here’s what you do: mow the grass as low as possible, lay your weed fabric right over top of the grass, then set your box in place. That’s the easy way. If you’re willing to do a bit more work, I’d suggest you remove the grass under where your SFG boxes will be placed. This will head off any problems with tenacious grass growing up through the bottom of your box. (Cheap weed cloth lets any vigorous weed through after a year or two. ) In either case, you can leave the grass outside the box alone, as a soft surface for the aisles between your boxes.
As long as it’s safe, a roof can be an ideal place for an SFG because roofs get a lot of sun. The roof has to be able to support the weight of the box, but usually, if it can support an average adult walking on it, it will have no problem supporting the weight of an SFG box. You’ll need a safe way to get up on the roof regularly, and you’ll need to run some sort of hose or water source up to the roof, because I don’t think you’re going to want to be lugging pails of water up four flights of stairs!
